There are no shortage of easy vegan camping meal ideas out there – that are healthy, delicious and oh so simple to get cooking over the campfire.

Here we bring you our favourite vegan camping recipes and vegetarian camping meals, so you can be king of the veggie campfire come breakfast, lunch or dinner time!

Up first, we bring you breakfast – home to some of the best vegan camping meal ideas.

Coconut French Toast

It’s French toast – made so easy, using a few staple ingredients that are easy to pack and store (and requiring no fridge!)

You will need:

1 loaf of crusty bread

1 ripe banana

1 can of coconut milk

Plus some coconut oil, 1tsp ground cinnamon, 1tsp vanilla extract & ½ tsp salt

Method:
In a container large enough for a slice or two of bread, mash the banana until smooth. Add the coconut milk, cinnamon, vanilla and salt and whisk to combine. In a skillet, heat 1 tbsp of coconut oil. Then simply dip a slice of bread into your batter and let it soak for a few seconds on each side. Fry on each side until crispy (about 3 minutes) and repeat! Try serving with a squeeze of maple syrup and some fresh berries and it’s one of the best vegan camping meals out there!

Time for lunch – and a recipe so easy it’s perfect campfire cooking for kids to get involved with too.

Chickpea Scramble

An effortless vegan option that is packed full of protein and requires just 5 ingredients and a few minutes to rustle-up.

You will need:

½ cup of chickpea flour

½ cup of vegetable broth

1 tsp garlic powder

¼ tsp turmeric

¼ tsp of kala namak (Indian black salt – for ‘eggy’ flavour)

1 tbsp oil, for cooking

Method:
Simply whisk all the ingredients (except the black salt), adding the chickpea flour gradually to thicken until you have a smooth batter. Add oil to a skillet and heat. Then tip in your batter and cook, mixing often until you have the consistency of scrambled eggs. Sprinkle in the black salt and season to taste. Then serve warm – with spinach or toast.

On to your evening meal – where one-pot dutch oven campfire cooking comes into its own. Time to sit round the fire and enjoy a proper hearty feast.

Sweet Potato and Peanut Stew

Easy dutch oven camping recipes don’t come better than this!

You will need:

1 tbsp oil

1 onion, diced

2 cloves garlic, chopped

1 sweet potato, chopped

2 cups of broth

1 can chopped tomatoes

¼ cup of peanut butter

2 tsp chilli powder

1 tsp salt

1 can of chickpeas, drained

2 cups of kale

Method:
To cook up this hearty storm in one-pot, simply heat the oil in a dutch over, add the onion and garlic and cook for a few minutes until softened. Add the sweet potato, broth, tomatoes, peanut butter, chilli powder and salt. Stir well and simmer, uncovered, for around 15-20 minutes (until the sweet potatoes are tender). Then add your chickpeas and kale until the chickpeas have warmed through and the kale has wilted.
